Ingredients 

  • ½ cup pomegranate juice
  • 2 tablespoons beet powder, or ¼ cup fresh beet
  • 2 medium oranges, peel and seeds removed
  • 1/2 cup kale or spinach
  • 2-3 slices fresh ginger
  • ¼-1/2 cup ice cubes, more as needed
  • Agave, maple syrup, or monk fruit to taste

Directions

  1. In a blender bowl, add all the ingredients except the sweetener.
  2. Blend until smooth. Add more ice or liquid if needed.
  3. Taste and add an optional touch of sweetener.
  4. Divide the smoothie into 2—10 oz servings

Dragon Fruit Smoothie

Ingredients 

  • 1 cup frozen dragon fruit or 1 dragon fruit smoothie pouch
  • 1 cup frozen mixed mango, pineapple, berries, or a combination
  • 1 cup coconut water
  • ¼ cup ice cubes
  • Agave nectar, honey, monk fruit, or sweetener of choice

Directions

  1. In a blender bowl, add all ingredients except the sweetener. Blend until smooth.
  2. Divide the smoothie into 2—12 oz smoothies or 3—8 oz smoothies.
  3. Taste and adjust flavor with optional sweetener.

Mango Strawberry Smoothie

Ingredients 

  • 1 cup frozen mango chunks or pulp
  • ½ cup frozen strawberry
  • ½ frozen banana
  • ½ cup soymilk, almond milk, or milk of choice, more as needed
  • 2 teaspoons vanilla powder or extract, optional
  • Agave, maple, honey, monk fruit, or sweetener of choice

Directions

  1. In a blender bowl, add all ingredients except sweetener.
  2. Blend until smooth. Add sweetener to taste.
  3. Recipe makes

Licuado de Nopal

Ingredients 

  • 1 ¼ cups coconut water
  • ½ cup frozen julienned nopal
  • ¾ cup fresh or frozen pineapple
  • ¼ cup cucumber, bitter peel removed
  • ½ cup fresh spinach
  • 2 ice cubes or crushed ice
  • Monk fruit or agave to taste

Directions

  1. Prepare nopales in advance. Purchase fresh nopales with cactus needles removed, julienne, and freeze in ½ cup servings for future use.
  2. In a blender bowl, combine all ingredients except the sweetener. Blend until smooth.
  3. Taste and adjust flavor with a touch of sweetener if needed.
  4. Divide the smoothie into 2—10 oz servings.
